REVIEW: Sinister Minister by Brimstone Brewing Co.

Out of Ridgeway, Ontario hails a little brewery called Brimstone Brewing Co., and they’re doing wonderful things.   Take Sinister Minister, a IPA that is a whooping 7.5% and big in body.

Out of the bottle pours a cloudy orange-amber colour with a off-white dense head that took a while to settle.   The aroma is piney hops, and I mean a lot of piney hops.  The piney hops balances it out with citrus and peel notes.

The taste is a big malt forward with floral and piney hops.  Sinister Minister is well-balanced with its medium-heavy bitterness.   It’s a big beer that has 7.5% but the malts and hops quite covers that.  It doesn’t feel like 7.5%, it feels more like in the range of 5.5% to 6.5%, strange, I know.

I got this bottle from On The Rocks Bartending Service, the new service, Craft Beer Club along with Brimstone’s Hail Mary (APA).

For Sinister Minister, this is a 3.5 out of 5 pints.
